Ultimate Macro Friendly Meal Prep: Delicious Pizza Tater Tot Casserole

I’ve had three babies in four years. I gained 50 lbs and have kept it on. I’ve had a c-section. I’ve had a kid in the NICU, I’ve experienced loss and heartache, I’ve fallen into the “I’ll just eat one chicken nugget” off the plate, and I’ve honestly just fallen into some really unhealthy eating habits
I was the heaviest weight I’ve ever been, and I was feeling overwhelmed and stuck.

That’s when I started tracking my macros and following the FASTer Way To Fat Loss program. This has not only helped me stay on track but also discover delicious, macro-friendly recipes that fuel my body and keep me satisfied.
One of my favorite meal prep recipes so far that perfectly aligns with my health goals is this Pizza Tater Tot Casserole. It’s literally. So. Good.

Pizza Tater Tot Casserole
Ingredients
- 25 oz Frozen Tater Tots
- 16 oz Extra Lean Ground Turkey (99/1)
- 7 Mini Bell Peppers diced
- pinch salt
- pinch pepper
- 1 tbsp oregano
- 28 g parmesan cheese
- 84 g mozzarella cheese
- 20 turkey pepperoni slices
- 3 italian turkey sausage links
Instructions
- Place 5 oven safe containers on a cookie sheet. Spray lightly with cooking spray.
- Add 5oz of tater tots to each container. Let them defrost for about 30 minutes.
- Preheat your oven to 350 degrees.
- In a pan over medium heat, cook your turkey and sausage. Remove sausage from the casing and mix it with the turkey. Cook until there's no more pink, and add salt and pepper. Don't forget to strain the grease!
- Stir in the bell peppers and cook until soft.
- Stir in the pizza sauce, oregano, parmesan, and 28 grams of mozzarella cheese.
- Once incorporated, add about 3/4 cup of the turkey/sausage mixture to your containers of tater tots.
- Top each bowl with the remaining mozzarella cheese.
- Add 4 pieces of pepperoni to each bowl.
- Bake for 45 minutes or until the tots are crispy.
